Harvest Pumpkin Soup

Preparation time: 60 minutes

Serves: 6 people

Ingredients:

  • 1 large onion, diced
  • 3 stalks celery, diced.
  • 2 medium carrots, diced
  • 1 large leek, diced
  • 2 cups of pumpkin, cooked
  • 6 cups of vegetable broth
  • ½ tsp cumin powder
  • ½ tsp of cinnamon
  • Pinch of clove
  • Pinch of nutmeg
  • Salt
  • 1 cup of almond milk, rice milk or half and half

Directions:

Add the first 11 ingredients into a stock pot over nedium-high heat. Bring to boil and reduce to simmer. Simmer for 30 minutes and remove from heat. Allow to cool for 15 minutes. Puree soup in blender and return to pot. Finish with milk and season to taste.
