A Recipe for a Healthy Heart

Serves: 4 people

Ingredients:

1 cup whole-wheat couscous
1 cup vegetable stock or water
½ cup  diced green pepper
½ cup  cherry tomatoes, cut in halves
½  cup canned black beans, drained and rinsed
2 green onions, chopped
1 tbsp finely chopped parsley
Juice of 1 lemon
1 tbsp olive oil
1 tsp cumin
1 tsp black pepper

Directions:

In a small pot, bring the vegetable stock or water to a boil. Turn off the heat and add the couscous. Let it sit for 5 minutes and then fluff with a fork and transfer it to a large bowl.
Add the rest of the ingredients and toss.
Chill for 1 hour and serve cold.

This salad is a good source of whole grains and beans, and a healthy alternative to meat.
